NATIONAL PANCKAE DAY

Adrianne inspired me to make breakfast for dinner. I remember having it growing up and always thought it was a such a treat. And now, as a mother, its such s stress free meal. So in honor of National Pancake Day, we had breakfast for dinner. I didn't take any pictures...to busy eating! Typically I just use the Krusteaz mix...just add water...how simple is that. But I I thought I would be a little bit more fancy so here is the DELIGHTFUL pancake recipe I used...that Tyler and my little brother, Jordan, couldn't say ENOUGH about!

BUTTERMILK PANCAKES

INGREDIENTS
3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted

DIRECTIONS
1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
2. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
3. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

I also made a pound and a half of bacon (love bacon), some cheesy scrambled eggs, and hash browns....I actually didn't have hash browns...instead I took the leftover tator tots in the freezer, defrosted them, and the cut them up...then cooked as you would hash browns.

Jett lost TWO teeth


That's a total of THREE teeth for Jett.

I think that is a record, right??.....to lose two teeth in one night. The first came out real easy, before dinner. The second tooth he had to work on. After his bath, he grabbed some paper towels and got to work. Ahh, I remember the days, sitting in front of that HUGE mirror in our Longwood house, with a roll of toilet paper, twisting and turning, pushing and pulling, trying to get a lose tooth out. What satisfaction I got whenever I would hear a pop or crack.

He started to wimp out...was getting tired and said it hurt too bad to twist. But the tooth was just HANGING by a thread....so Tyler helped him along!

My handy (candy) husband


I guess Tyler got sick of the trash cans "roaming" the alley behind our house and he and Jordan built this caddy for them.
When I got into his truck to move it to the front of the house, I laughed as I caught a glimpse of his door....I guess it isn't just mountain dew he grabs while at the gas station! (and yes, that is a bright orange parking ticket stuffed in there, too!)
I love my husband and his random treat selections...I think I see a DOTS box!? Who eats those?!

Sunday Treat


I had planned on making this dessert yesterday for Valentine's Day. But we were all so stuffed after dinner and the chocolate covered strawberries, that we decided to put it off until tonight. I have one word for you....DANG! They were super easy and so delicious. Tyler said I was "fancy" and Duce kept saying, "Make more, mom. Make more". The rest were too busy stuffing their faces. Happy Valentine's Day


These are a few of the yummy things we had to eat today. I let everyone (almost everyone) pick what they wanted for dinner and then made a combo of them. So the menu was
Tyler-steak
Duce-little smokies
Jett-broccoli and carrots
Avery-macaroni and cheese
and I picked salad....more to offset the little smokies and macaroni and cheese
Tyler made some homemade cheese fries (that he made in his new deep fryer...his favorite thing these days)
Jordan and Shanda came over and we had a delicious Valentine's Day dinner together. We then finished it off with these YUMMY strawberries.
And FYI--I LOVE MY HUSBAND!

Let me CLARIFY

My last post about jett....my friend, Linnea, brought it to my attention that given what he wrote down, in this day time, it could've been disastrous....if the school took issue. But thankfully we live a place were the right to bear arms is highly regarded. Taking the boys to school, you see trucks with dog boxes in the back....we're mountain people here. Jett wants to be a hunter. His idea of a good time is camping and hunting...sitting in a tree stand with his two favorite uncles would be his ideal afternoon activity. Glance through his church notebook, and you will see sketches of hogs, buck, doe, squirrels, etc....anything that you can hunt, its in there. So NO he is not troubled. He's a hunter in training,

So I tried emailing this, but the extended version my kids sang (more specifically, Duce's descant at the end) made it too long to email...and I can't quite figure out how to edit a video. So this is for you Aidan. Duce was REALLY bummed he couldn't be there with you on your birthday. We love you!

It's Tee's birthday!




Our baby boy turned one today. He has been a wonderful baby, albeit my hardest baby, but a wonderful baby! He has fit into our family so seamlessly. We just adore every bit of him. And he adores the kids....they can get him to belly laugh harder than me or Tyler.

So maybe he was jipped a little...he didn't get a homemade fancy shmancy cake...just not enough time...so instead he got a HUGE cupcake from the grocery store. (that was a little note duce had made for him!)

SNOW DAY


School was canceled today. The kids were THRILLED. Buena Vista is a little whimpy when it comes to snow days.....a couple of inches does us in!
back story---while in Ohio last weekend, Avery came in and said to me, "Mom, this isn't regular snow. This is FIRE SNOW!" She hasn't ever been in real snow before and had no idea what it does to your hands...hence the reason for gloves. So Avery came in from playing this morning and said, "Mom, our snow is FIRE SNOW, too!"

So much for our snow....it only lasted a few hours.
BUT while it was here, the kids sure had LOTS of fun

The boys did these ALL by themselves...and it is the FIRST official snowman for both of them!
