Could I be sore...

Could I be sore....from bowling? The kids talk about bowling ALL the time. We've never been with them, so we thought we should. So for Tyler's birthday, we took the three big kids. The were just plain GIDDY in the car...smack talking and everything.
We had a blast. Tyler just barely eeked out a win in the first game. And the second, he dealt with is all handily! Avery was so cute to watch...pointed and yelling at her ball, telling it where to go. I got the first strike of the night! Everyone but Duce (much to his chagrin) got a strike, too.

We ended the night at one of our favorite little joints, Salerno's. And if we weren't stuffed enough, we went down the street to a little ice cream shop.

Happy Birthday, Tyler! We LOVE you!

How the time flies


I love this picture. For many reasons. One being, I love seeing the size difference between these two. Duce, my oldest. And Tee, my youngest. Another reason being that it reminds me how fast time flies. I can still remember when it was Duce that was the little guy. My only one at the time. And I remember thinking how much I loved this little kid and how could you possibly love anyone more. And then Jett came and then Avery and then Josie and then Tee. And you realize that you love them too. And just as much! And it all happens so fast. Yes, there are days that I wish I could just sleep in and not have ANYONE come into my room, do only ONE load of laundry a week, or not have to see all bakugan guys on the floor AGAIN! But I love this life. And its seems to be clipping along quickly! Before I know it, Duce will out grow me. (he is WELL on his way) and Tee will be the one leaving the bakugans everywhere. I love this picture!

Beach day in FL


What is a trip to Florida without a day at the beach. This is one of the days we went. Duce and Jett were at a campout with their cousins, so just the little kids came.

This was an interesting trip for me....the other little babes that came along were content to play around the beach chairs and splash in the big holes we dug for them. But not Tee. He wanted to roam. He wanted to visit everyone elses beach site. He wanted to walk and walk and walk and walk and walk. I don't think I sat down once! I'm not complaining, though. Who can't have fun at the beach?!?!

The PERFECT day...a little overcast, so it wasn't too hot. The water was still too cold for me, but that didn't stop any of the kids from enjoying it.

mmm...this will be a new anderson favorite


asian chicken lettuce wraps

3 frozen chicken breasts
1 large carrot
8 whole mushrooms
3 green onions
1 red bell pepper
2 large cloves garlic, minced
1/2 can water chestnuts, drained
2 Tablespoons oil
1/4 teaspoon sesame oil
1 head iceberg or butter lettuce, leaves washed and separated in wholes
rice noodles, fried quickly in hot oil (optional)

sauce: *(double for dipping sauce, set aside half, see notes below)
1/2 cup water
1/4 cup sugar
2 Tablespoons rice vinegar
1 teaspoon sesame oil
1/2 teaspoon sriracha (asian chile sauce)
1/2 cup soy sauce
1/2 teaspoon fresh ginger

bring chicken breasts to a boil in water to cover with a pinch of salt and a clove of garlic. boil for ten minutes. remove from water and chop finely, about the size of a kernel of corn.

meanwhile, finely grate carrot. finely dice onion , water chestnuts, mushrooms and bell pepper to the same size as the chicken pieces, about the size of a kernel of corn.

*mix together sauce ingredients. whisk to combine. if you want a dip for your wraps (yes you will want a dip,) make another batch (or double) sauce, and to the dipping sauce add: a bit more sriracha, 1/8 tsp red pepper flakes, and 1/4 teaspoon fresh ginger.

heat 2 Tablespoons oil and 1/4 teaspoon sesame oil in a large pan. add onions, mushrooms and red bell pepper. cook 2 minutes to soften. add chicken, water chestnuts, and garlic. saute for 2 minutes. add sauce to pan, bring to a boil, and simmer for 10 minutes until liquid is reduced and there is almost no liquid left in pan. stir in grated carrot. serve on bed of rice noodles with a plate of whole lettuce leaves. yummy with veggie peanut noodles or hot rice!

I found all the ingredients at Wal-Mart and the family DOWNED it! Maybe its been a long time since I ate these at PF Changs, but these tasted just like them. And it really was SO simple to make. The only thing that was annoying was all the dicing...probably because I have a sliced finger that kept getting juices in it and stinging. But other than that, super simple, super delicous. I think I am making them again tomorrow night...I still have all the ingredients. My only word of caution...double the recipe! You will be surprised how fast it goes!

We are back! We have spent the last two weeks in Florida, enjoying sun and fun and family and food! I've got a TRUCKLOAD of pictures, which I will spare you most of them and just give the highlights. Here are a VERY few of our Easter pictures. We missed Tyler, who had to stay in VA because of work. Me, especially. 9 years ago, as I was digging through my easter basket, I found a diamond ring and my hot boyfriend became my hot fiance!

"How Does Your Garden Grow?"


While grandma munns was here a few weekends ago, she helped us get a head start on our garden.
The kids LOVED the idea of planting seeds. Jett will take the sesame seeds off his cheeseburger and try to plant them, so this was right up his alley.

We are looking forward to a bountiful harvest all summer long. And the kids actually will eat what we grow....more so than if I just bought it at the store...funny huh! Now Tyler is another story....but he is coming along...spinach, squash zuchinni, yes....tomatoes, not so much.
