NATIONAL PANCKAE DAY

Adrianne inspired me to make breakfast for dinner. I remember having it growing up and always thought it was a such a treat. And now, as a mother, its such s stress free meal. So in honor of National Pancake Day, we had breakfast for dinner. I didn't take any pictures...to busy eating! Typically I just use the Krusteaz mix...just add water...how simple is that. But I I thought I would be a little bit more fancy so here is the DELIGHTFUL pancake recipe I used...that Tyler and my little brother, Jordan, couldn't say ENOUGH about!

BUTTERMILK PANCAKES

INGREDIENTS
3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted

DIRECTIONS
1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
2. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
3. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

I also made a pound and a half of bacon (love bacon), some cheesy scrambled eggs, and hash browns....I actually didn't have hash browns...instead I took the leftover tator tots in the freezer, defrosted them, and the cut them up...then cooked as you would hash browns.

YUMMY!

Sound SO good, I might have to try it! I sometimes use apple juice with the Krustaez mix for more flavor than the water.

My kids LOVE pancakes for dinner - and is possibly the quickest meal to make. They are in heaven when we have that squirt whipped cream on hand and a few chocolate chips to top it off. Why even go to IHOP? We can have all the goods at home. You are wonder woman for doing the bacon though, that is going all out! Sounds yummy!
